后发酵

The post-fermented tea - The raw green tea leaves turn black after being piled up for fermentation. Puer Tea leaves are used mostly as raw ingredients for many types of Compressed Tea. The raw compress Puer Tea exposed & aged naturally by itself in a good storage space with good weather temperature & humidity like Malaysia. “后发酵”是茶叶在高温杀青或高温干燥之后进行增湿堆积发酵的过程,也就是“渥堆”。 熟茶: 云南大叶种鲜叶--杀青--揉捻--晒青毛茶--分级归堆--潮水渥堆--风干醇化--筛分拣剔拼配--灭菌--压制干燥--熟茶。 生茶: 云南大叶种鲜叶--杀青--揉捻--晒青毛茶--蒸压制型--生茶。 前面两种显然是发酵茶,而生茶则是在存放过程中,在气候,湿度,氧气等的影响下缓慢发酵成熟,所以也是发酵茶。 — 摘自紫藤The Post Fermented Tea
